Some simple and tasteful recipes with olive oil

 

Bruschetta  
bruschetta all'olio extravergine Ingredients:

-any type of bread
-2 garlic cloves
-olive oil
-ripe tomatoes
-salt

Preparation: Slice the bread and divide it into equal parts, sprinkle some garlic, season with olive oil and add salt and pepper. At this point place it in a preheated oven on "grill". Before the bread will become too crisp, remove it from the oven and add the diced tomatoes, a dash of olive oil and oregano. Place back in the oven for a few minutes and serve hot.
   
Penne with basil and olive oil
 
penne al basilico  Ingredients for 4 people:

-400 gr. of penne
-a good handfull of basil
-1 yellow pepper and a red one
-2 anchovy fillets
-½ glass of olive oil
-salt

Preparation
: Roast the peppers on the grill, peel them carefully and cut into strips. Finely chop the basil and the anchovies. Mix the anchovies with the oil and add a pinch of salt. Cook the penne, drain and cool them "al dente". Put them in a bowl, sprinkle them with the chopped bell peppers and basil and season with the anchovy sauce and oil. Stir well and serve.
   
Bean salad
 
fagioli tonno e cipolla  Ingredients for 5 people:

-400 gr. of white beans
-2 cans of tuna
-1 small onion
-200 gr. of olive oil
-40 gr. Gaeta's black olives
-vinagre

Preparation
: Boil the beans without overdoing them, drain and toss them with the tuna, the finely chopped onion, the olives and olive oil, sprinkle a bit of vinegar and let it sit for about 1 hour before serving.
   
Pignatiello beans

(recipe from Naples)

Ingredients:

-2Kg. of beans
-salt
-garlic
-celery
-oil

Preparation
: Let the beans soak overnight. In the morning add the beans to the "pignatiello" (terracotta pot), cover with water and add some salt, garlic and celery. Put the pignatiello next to the fireplace and leave it until the beans are cooked. When cooked, place the "freselle" (dried bread) in the pot, place the beans on top of them and season with olive oil.


   
Spaghetti with pesto and almonds  
spaghetti pesto e mandorle  Ingredients for 4 people:

-350 gr. of spaghetti
-3 garlic cloves
-30 basil leaves
-about 10 almonds
-1 dl. of extra vergin olive oil
-1 ripe tomato
-100 gr. of grated goat cheese
-salt and black pepper as needed

Preparation: Place in a blender garlic, basil and the seedless peeled tomato. Drizzle extra virgin olive oil. Fry the almonds in extremly hot olive oil, dry them out and cut them in pieces. Add them to the pesto with salt and pepper while mixing the sause so that it stays liquidy. Cook the spaghetti al dente drain and toss with the pesto. Serve with grated goat cheese.
   
Farmer's cold pasta dish  
pasta fredda del contadino  Ingredients for 4 people:

-300 gr. of the pasta of choice
-200 gr. of onions
-1⁄2 dl. extra vergin olive oil
-the juice of 2 lemons
-salt and pepper as needed

Preparation: Cook the pasta al dente, drain it and then cool it under running water. Separately, finely chop the onions and put them in a bowl. In the end add a pinch of pepper and let rest for fifteen minutes.
   
Porcini and spinach salad  
insalata di funghi porcini  Ingredients for 4 people:

-400 gr. of spinach
-150 gr. of fresh porcini mashrooms
-50 gr. bacon
-9 Ts of olive oil
-the juice of a lemon
-salt and pepper to taste

Preparation: Clean the mushrooms and slice them thin. Thoroughly wash the spinach and put them together with the mushrooms in a bowl. Sauté the chopped bacon in 2 tbsp oil. Create the dressing by using the remaining oil, lemon juice, salt and pepper. Mix gently and serve immediately.
   
Chocolate Cake  
cioccolato ed olio d'oliva  Ingredients:

-75 g of cocoa
-100 g oil
-100 g sugar
-150 g flour
-3 eggs
-1 pouch of baking powder
-1 dl of milk
-salt

Preparation
: Beat the egg yolks with the sugar, add flour, cocoa and baking powder, alternating oil and milk. Beat the egg whites with the salt until stiff and add them to the mix. Pour the mix in a baking pan greased with oil and flour. Bake at 180/200 ° C for 40 minutes.
   
Pear Cake

-4 pears aprox 400 g
-100 g oil
-150 g sugar
-150 white flour
-3 eggs
-1 pouch of baking powder

Preparation: Wash the pears and cut them into wedges. Beat the eggs with the sugar, when the mixture turns white add alternating the white flour (with baking powder) and oil. Put the batter into the pan and arrange the pears into a crown shape over it. Bake at 200 ° C for 45 minutes and let it cool in the oven.
